INGREDIENTS:
- 1 yellow onion, chopped
- 2 tablespoons butter
- 2 cloves garlic
- 2 tablespoons ginger
- 2 cups beetroot, peeled and cut
- 1 potato, peeled and cut
- 2 apples, peeled and cut
- 4 cups chicken broth
- Salt & pepper
PREPARATION:
In a large saucepan, soften the onion in the butter.
Add the garlic, ginger, beetroots, potatoes, and apples. Continue cooking.
Add the chicken broth, bring to a boil, and simmer until perfectly cooked.
Using a blender, purée the soup until smooth.
