Carrots are a versatile vegetable that can be cut in many different ways depending on the method of preparation chosen: slices, juliennes (sticks), brunoise (cubes), and, of course, grated. If you are a fan of the grater, be sure to season your carrots at the last minute or add lemon juice to prevent them from turning black.
Fresh carrots are delicious with cream, herbs and spices, glazed, cooked Vichy style (sliced and boiled with sugar), and as part of a garden salad.
Carrots can also be used for soups, purées, pies, and stews. They serve as toppings for casseroles. Of course, they can also be eaten raw—a real treat for children.
