RUTABAGAS SOUP WITH MAPLE SYRUP

The perfect match!

INGREDIENTS FOR 6 PORTIONS

  • 1 rutabaga about 400g
  • 1 small potato
  • 1 small onion
  • 1 garlic clove
  • 1.3 cm (1/2 in.) fresh ginger
  • 30 ml (2 tbsp.) olive oil or canola oil
  • 1 to 1.5 liters of chicken broth
  • A few drops of apple cider vinegar
  • 15 ml (1 tbsp.) Maple syrup
  • Salt
  • A few drops of Tabasco sauce
  • 15 ml (1 tbsp.) 35% cream (optional)

PREPARATION

Peel and cut rutabaga, potato, onion, ginger and garlic into pieces.
Pour a little oil in a saucepan, heat and brown the vegetables.
Deglaze with the apple cider vinegar.
Add the chicken broth.
Cook until vegetables are tender.
Pour into a blender and mix well.
When the desired consistency is reached, taste and season with salt, maple syrup and Tabasco sauce.
