A delight for your taste buds!
INGREDIENTS
- 2 ½ cups flour
- 2 tsp. ground cinnamon
- 1 cup vegetable oil
- 4 eggs
- 3 cups grated carrots
- 1 cup raisins (optional)
- 2 tsp. baking soda
- 1 tsp. salt
- 1 ¾ cups sugar
- 1 tsp. vanilla
- 1 cup chopped walnuts
Cheese Icing
- 2 ½ cups icing sugar
- 1 package cream cheese (113 g)
- ½ cup softened butter
- 1 tsp. vanilla
PREPARATION - Cake
Combine flour, baking soda, cinnamon and salt in a bowl.
In a large bowl, beat eggs, add oil, sugar, and vanilla. Add dry ingredients to egg mixture and beat with a mixer for about 2 minutes.
Add carrots and nuts (and raisins, if desired). Mix well with a spoon.
Butter a baking pan with a hole in the center and sprinkle with flour.
Pour the mixture in baking pan and bake at 350°F. Check after 35-40 minutes. Do not overcook.
PREPARATION - Cheese Icing
Spread over cold cake and refrigerate.
