A tasty side dish!


  • 45 ml (3 tbsp.) butter
  • 30 ml (2 tbsp.) honey
  • 4 long-thin carrots, peeled and cut lengthwise into 4
  • 4 small parsnips, peeled and cut lengthwise and crosswise into 4
  • 4 black salsifies (optional), peeled and cut lengthwise into 2 or 3
  • 2 medium sized turnips, peeled and cut into 6 pieces
  • 1 leek, cut into sections 2.5 cm (1 inch)
  • 1 onion, chopped OR 12 small pickling onions
  • 10 ml (2 tsp.) fresh leafless thyme
  • Salt and pepper


Place rack in center of oven. Preheat oven to 180°C (350°F). In a large ovenproof skillet, heat butter and honey. Add vegetables and thyme. Cook for about 10 minutes over medium-high heat, without stirring too much to allow the vegetables to caramelize. Salt and pepper to taste. Place skillet in oven and cook for about 40 minutes or until vegetables are tender.
A delicious side dish with beef, wild meat, pork or poultry.
